 ভিনেগারকে বাংলায় আমরা বলে থাকি সিরকা।এটি একটি তরল পদার্থ যা অ্যাসিটিক অ্যাসিড (CH3COOH) ও পানির মিশ্রণ। ভিনেগারে সাধারণত ৫ শতাংশ অ্যাসিটিক অ্যাসিড থাকে। ভিনেগার তৈরিতে আপেল, আঁখ, নারিকেল, খেজুর, নাশপাতি, টমেটো, চাউল, গম, মধু, বিয়ার ইত্যাদি ব্যবহৃত হয়। যুক্তরাজ্য, জার্মানি, অস্ট্রেলিয়া  ও নেদারল্যান্ডসে বিয়ার ভিনেগার প্রচলিত। আঁখ থেকে তৈরি ভিনেগার ফিলিপিন্সে জনপ্রিয়। তবে ফ্রান্স ও যুক্তরাষ্ট্রেও এ ধরনের ভিনেগার প্রস্তুত করা হয়। নারকেলের পানি থেকে তৈরি ভিনেগার মূলত ব্যবহৃত হয় দক্ষিণ-পূর্ব এশিয়ার দেশগুলোতে।  আর মধ্যপ্রাচ্যের দেশগুলোতে ভিনেগার প্রস্তুত করা হয় ঐতিহ্যবাহী খেজুর থেকে। অধিকাংশ ফলের ভিনেগার তৈরি হয় ইউরোপে। তবে, চীন ও কোরিয়াতেও ফল থেকে ভিনেগার প্রস্তুত করা হয়। অবশ্য চীনের কালো ভিনেগার বিখ্যাত। ইতালি, ফ্রান্স, রুমানিয়া ও স্পেনে পাওয়া যায় মধু থেকে তৈরি ভিনেগার। চাউল থেকে তৈরি ভিনেগার পূর্ব ও দক্ষিণ-পূর্ব দেশগুলোতে ব্যাপকভাবে জনপ্রিয়। ভিনেগার আজকাল শুধু রান্নার কাজে ব্যবহৃত হলেও, গৃহস্থালী পরিস্কার, পুড়ে যাওয়া, চিকিৎসায় পথ্য ইত্যাদি বহুবিধ ক্ষেত্র...
